POSITION FUNCTIONS
The Management Trainee will be given diverse and various operational and analytics responsibilities at each Food Operations outlet. The Management Trainee will interact with each culinary management and work on projects & assignments to make meaningful contributions. At the completion of training management trainee will be responsible to submit qualitative and quantitative performance reports and updates on galley operation
POSITION RESPONSIBILITIES:
- Learn and ensure that all company-specified procedures are followed up in the food operations.
- Learn and to have comprehensive knowledge of all the food menus, recipes, food preparations and presentations.
- Must have successfully undergone the sous chef training program within the stipulated period and clearly demonstrate the ability to develop and maintain training programs
- Ability to learn operational procedures of the department and ensure team members follow the same
- Must be perceptive in handling guest and crew related issues for a positive outcome
- Ability to conduct Chef’s Table program and any other public engagement successfully
- Good Knowledge of TGEM and TCEM data and their effects on operations.
- Good knowledge of the latest culinary trends through literature, online media and practice
- Should have comprehensive knowledge of USPH, HESS, SAFETY and ECP compliance requirements of the operations
- Continually trains and coaches assigned staff in correct production methods and skills, culinary techniques, menu and recipe knowledge, product holding techniques, and presentation and delivery of the product.
- Working knowledge of computer applications & office software (Crunch Time, Info ship, Outlook, Word, Excel & PowerPoint
- Learn and have knowledge of the food cost, supply cost, inventory management, and cost management and ensure budgets are well maintained. To ensure all areas are well stocked with products and supplies.
- To be familiar with all equipment in F&B areas and have knowledge of the proper cleaning procedure for them.
- Learn and gain hands-on experience in storeroom operation, including all receiving, loading, issuing, thawing and inventory management
- Responsible for complying with company environmental policies and procedures.
- At the completion of training, the management trainee must be able to put together a viable 6-course meal in accordance with current industry standards
